Not so sure about the reuse part.

I pick up Real Simple magazine whenever there’s a new one, but I rarely read through them.  I made it through August’s issue, though, and there are just a few things I want to save without needing to save the whole magazine, so…..enjoy, I guess (though this is mostly for me).

Ham and Cheese Quesadillas
serves 4
4-10 inch flour tortillas
1 pound fresh mozzarella, thinly sliced
1/2 pound thin sliced deli ham
1 cantaloupe cut into wedges
>Heat Broiler.  On one half of each tortilla, layer the cheese and ham.  Fold the over half of each tortilla over and place on a broilerproof sheet pan
>Broil until cheese has melted and tortillas are brown, 2 to 3 minutes per side.  Cut into wedges and serve with fruit

Ravioli with sauteed zucchini
serves 4
1 lb cheese ravioli
2 tbsp olive oil
3 small zucchini, sliced into thin half moons
salt and pepper
2 cloves of thinly sliced garlic
1/2c grated Parmesan
>Cook Ravioli according to package directions.  Drain and return to pot
>Meanwhile, heat oil in large skillet over medium heat.  Add zucchini, salt and pepper and cook until tender (4 or 5 minutes).  Add garlic and cook for 2 minutes
>Add zucchini mix and 1/4c Parmesan to the ravioli and toss gently.  Garnish with remaining 1/4c of Parmesan.

Summer Pasta Bolognese
serves 4
12 ounces of fettuccine
2 tbsp olive oil
1lb ground turkey
salt and pepper
2 cloves chopped garlic
1.5 lbs beefsteak tomatoes
1/2 dry white whine
1 small zucchini, coarsely grated
3/4 fresh basil leaves
>Cook pasta
>heat oil in large skillet.  Add turkey and season with salt and pepper.  Cook for 3 minutes
>add garlic and cook for 1 minute.  Add tomatoes and wine and simmer, stirring occasionally,until turkey is cooked through and sauce has thickened, 4 to 5 minutes
>remove from heat and fold in zucchini and basil.  Serve over pasta

And now, off to the recycle bin.

It’s Friday
I’ve had the flu since Monday.
I had a foot long q-tip shoved up my nose on Wednesday that apparently quickly and impressively turned a positive color.  I was given three perscripitions that I chose not to fill and take because it would mean cutting Cadence off of her nana and I was worried that if she too got the flu she would need her nana to make sure she was getting fluids and nutrition.

And I was RIGHT!  Cadence started feeling funky yesterday and moped and napped all day.  Today she was cranky, but tonight seemed to be feeling much better, though my concerns did come to pass and the only thing Cadence ate until dinner time was 1/4 of a bagel, 1/8th stick of string cheese, 1 macaroni noodle and nana. 

I’m feeling partially better.  No raging fever tonight and my hacking cough is less, well, hacking?  And less frequent, but I have a monster of a stiff neck that, if this was yesterday or Wednesday, I’d be running around here screaming about having meningitis.   Emily who was feeling better yesterday has deteriorated today and is running a fever again, so who knows and now Eric has the shivers under the warm blanket from the couch.

We’re thinking I’m feeling better, but the truth is, I’m just ready for bed.

As an aside, I will be closing comments until further notice. I’m getting spammed like crazy and had something like 550 comments to remove this evening when I logged in. Since I’m not able to post as much as I’d like now, this is the best way to do it. I fyou need to reach me, I’m available via email at jamie at ericandjamie dot com.

Anyhow, time marches on. We put up the Christmas tree last night. With the foot or better of snow on the ground, it just seemed Christmassy and Eric agreed so up it went. I decided it was better to do it now, when we had the inclination and desire than later when it felt like an obligation and something we were rushing to do.

Emily and I did some more decorating today and wrapped some presents. I have a few more to wrap when Emily is at school and some shopping today, but we’re moving forward and doing MUCH better than we did last year.

Cadence is doing well. She’s a sweet baby, but defiantly more needy than I remember Emily being. I don’t mind, but it seems as though I spend a good deal of time on the couch or bouncing ro doing my best to entertain someone with a thirty second attention span. (Eric’s is only 45 seconds, so I’m semi-used to it ;o) It means a lot of nursing–and while I CAN use the laptop while I’m doing that, it’s hard to type one handed and not worth the effort at this point in time. I’m patient. I know this stage will pass.

Cadence, unlike other babies, seems to sleep very little. SOme information suggests that three month old babies should sleep 15 hours a day. I suppose it’s possible Cadence does sleep that much with various cat naps, etc, but it seems unlikely. She only gets about half that total over night, sleeping usually from 10 or 11 until 3 and then until 6. I’m doubtful that her little cat naps over the course of the day add up to eight hours or better. Thankfully, she seems to be a happy baby and the lack of sleep doesn’t seem to bother her at all, it just makes it VERY difficult to get much done because as soon as I try to start something (cleaning, usually, is my first priority) she’s awake again and I’m either rushing through what i’m doing or stopping it altogether.

But, again, I look at how quickly Emily’s babyhood lasted and I honestly don’t mind. I miss doing some of the thigns I used to do, but I’ll have my whole life to do those things. Cadence will only be here once.

Nothing crafty is happening. No time. I moved my scrapbook stuff down stairs in anticipation of scrapping last weekend. That didn’t happen, but I think I have a better chance with it down there then upstairs, so maybe I’ll turn a page or two out before the end of the year.

Or not.

Today is Eric’s last day of paternity leave. I’m sorry to have seen this time pass by. It went so quick. I’m sure he must feel he same way. Work has been busy, even with him being home.

I got Emily off to he bus today and yesterday. It went okay. Today I slept in a little long, but I know that will get better. As Eric says, worst case, I’ll be driving her to school. Tha’s not a big deal, overall, but something I’m hoping to avoid.

Emily is begging to decorate for Halloween. I’ve declined. I don’t decorate for halloween early. But it IS time to decorate for fall. Lots of people have been making Pumpkin Topiaries and I’m thinking of making a few myself, but using the Fake pumpkins. i think overall, the cost will be lower and I can keep it for next year, though I may use baby pumpkins o make some for indoors and I have plans for Emily and I to make leaves to hang from the dining room light and archway.

It sounds like we’re going to go apple picking this weekend, so stay tuned.
